The Armaiolo Farm


In Rapolano Terme, in the province of Siena, stands an enchanting 560ha estate, which produces wine, olive oil and Cinta Senese luncheon meats. It is also offers accommodations, and facilities for hunting, fishing and hiking.

Among the woods, the pastures, the crops and the parishes of Rapolano Terme, stands the Armaiolo Farm, whose estate stretches over 560ha, of which a 450ha wood, a 23ha olive grove, a 3ha vineyard and wheat, maize and sorghum fields. There are also 13 farmsteads, thee of which are used to accommodate visitors. Agritourism is indeed another important activity, with 150 pigs of the Cinta Senese breed and a pheasant plantation. As for the winery, it is part of the Qualitoscana short supply chain project.


A multitasking farm

The Armaiolo Farm produces wines, such as Grance Senesi CDO, extra-virgin olive oils and Cinta Senese luncheon meats. Everything can be purchased at the company outlet. With an annual oil production of 10,000kg, the Armaiolo Farm is part of the Terre di Siena PDO and Toscano PGI oil consortiums. The oil has a deep green colour, and a fruity fragrance and flavour, with undertones of almond and artichoke. The Cinta Senese pigs are reared unfenced. Their meat, which has obtained a Protected Designation of Origin, is used to make prosciutto, capocollo, lombo, finocchiona, sausages and salamis.


Vineyards across Tuscany and Umbria

In addition to the 3ha Sangiovese, Cabernet Sauvignon and Malvasia vineyard, the farm own land in the province of Terni, Umbra, with Merlot, Chardonnay and Ciliegiolo grapes. Winemaking is carried out at the Armaiolo Farm with a yearly output of 50,000 litres. The local grape cultivars are used for the Grance Senesi CDO wines, which include 9 types plus Riserva wine, and the Toscana PGI wines. On the other hand, the Umbrian grapes are used for label-free table wine. Grance Senesi is 70% Sangiovese, 25% Cabernet Sauvignon and 5% Merlot. It is aged in vats for 8 months, in barrels for 6 and in bottles for 4. It has a deep ruby colour, a fruity flavour and a round, well-structure, balanced and elegant body, which marries perfectly with game and mature cheeses. As for the Toscana PGI wines, they are obtained from Malvasia, trebbiano and Chardonnay grapes. Rosso, The Sangiovese-based Rosso, Rosso Riserva and Sangiovese Varietale are the Armaiolo Farm’s response to the global tendency towards varietal wines.
